That soup that taste like home...
1. Chop your onion. Add it to a large soup pot along with the olive oil. Sauté over medium-high heat for 5-7 minutes (ok if onion lightly browns). Add the carrots and the tomato for another 2 mins.
2. Add the whole chicken and sauté for a bit on both sides.
3. Add the chicken broth, salt, and pepper and let it simmer for one hour.
4. Once the chicken is cooked, remove it from the pot and shred it using your hands or fork.
5. Using an inversion blender, blend all the ingredients in the pot.
6. Add the chicken back to the broth.
7. Add the tortellini pasta and cook for about 10 mins.
8. Garnish with half R.G. Avocado and parsley
